Introduction to Food and Agriculture is a first approach to and basic analysis of the food and agricultural practices of the territorio – or geographic area – in which it is given. It provides an introduction to the Slow Food movement in Italy, a summary of best practices in livestock farming and agricultural development, and a first level analysis of the impact of the Food and Agriculture industry both on the Tourism industry and on Italy’s economic prosperity as a nation and in international commerce and trade. In Florence, this course will be given in collaboration with a local culinary institute for a closer look at the availability and pricing of resources in a metropolitan area. In the Monte Argentario program, it will also make substantial use of neighbouring and partnering Eco-tourism facilities, vineyards, and farms in its hands-on didactic approach to course material.
